Easy Keto Chocolate Cake

  • 4 eggs large
  • ½ cup unsalted butter melted and slightly cooled
  • ½ cup Lakanto Classic Sugar
  • 1 teaspoon vanilla extract
  • 1 cup almond flour
  • ½ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ½ teaspoon baking soda

Keto Chocolate Cream Cheese Frosting - For thinner layer, halve recipe

  • 8 oz cream cheese softened - use 6 oz if you don't want a less cream cheese flavor
  • 2 tablespoons butter melted and cooled
  • ½ cup unsweetened cocoa powder use more or less depending on how chocolatey you want it
  • 1 teaspoon vanilla extract
  • 1 /2 cup Lakanto Classic Powdered Sugar use more if needed or if you want it sweeter
  • ¼ teaspoon salt

Easy Keto Chocolate Cake

  • Preheat oven to 325 degrees F. Generously grease an 8x8 baking dish with butter or line with parchment paper and spray with non-stick spray, .

  • In a bowl, whisk together the eggs, melted butter, sugar, and vanilla extract until well combined.

  • Gradually whisk in the almond flour, cocoa powder, salt and baking soda and mix together well so everything is combined without over-mixing. (This is a thick batter.)

  • Pour cake batter into the prepared pan and smooth out the top with a spatula. Bake until the center is set and a toothpick inserted in it comes out clean, 20 - 25 minutes.

  • Let cake cool in the pan completely before frosting.

Keto Chocolate Cream Cheese Frosting

  • Using mixer, whip all the frosting ingredients in a medium bowl until smooth and fluffy, 1-2 minutes. Modify as needed.

  • Frost and serve.

To soften cream cheese, put in microwave for 20 seconds.  It works great!

How Do You Make A Keto Cake More Moist And Less Crumbly?

A dry, crumbly cake is one of the unfortunate struggles of baking keto. Many people face the disappointment of a dry sugar-free chocolate cake that turns crumbly, especially after storing it in the fridge.

The crumbly and dry texture of low-carb chocolate cake is due to the lack of gluten. Gluten is a protein found in wheat, so baked goods become crumbly without it. Luckily there are ways to make a dry low, carb chocolate cake moist. The best ones include:

Adding coconut oil

Adding coconut oil will significantly improve the texture of your keto chocolate cake. The coconut oil will easily complement the chocolate flavor, so don't worry about ruining the cake's richness.

Adding sour cream

Sour cream will also give the keto chocolate cake a smooth texture that will not turn crumbly. It will also help to lock moisture.

Adding almond milk

This is the best way to make your cake moist. Just add almond milk to the cake batter, and it will produce a moist keto chocolate cake.

High-quality dark chocolate contains at least 70% cocoa solids. This is the quality you should aim for because any less contains higher carb content that will go against keto dietary advice. Therefore, look for high-quality dark chocolate.
